Our days at Cipollina begin early in the morning by baking the breads and lighting a fire in our bee-hive oven for those thin, crispy pizzas that have made Cipollina famous. The chef plans out what we are going to do with every little part of the meats that get fabricated in our kitchen, ensuring that nothing goes to waste and that everything is cooked to perfection in a clean and creative environment.
We shop for vegetables at the local farmers market often in order to provide our guest with the best expression of Central Texas produce for our special menus. Stocks bubble slowly on the stove for 8 to 10 hours yielding up the aroma you anticipate tasting in your soup, while beef and lamb roast gently.
Maybe you hear a soft Paolo Conte refrain, maybe you smell pistachio cookies cooling, maybe you sip your wine staring out at the palm trees and rosemary that grow outside our door. Maybe you are even reminded of a place in Europe.
